Crab Nachos. Oh, Yes!

It’s cold and rainy. Yesterday was a marathon that started with teaching a 7am yoga class and ended teaching a 7:30pm yoga class, and only an hour break in between. Tonight, though, tonight is free and after a quick errand, I came home, sweet home. And made the quickest, yummiest “yay, I have the night off” nachos. Oh, and that errand? A quick trip to Trader Joe’s for all the supplies except the avocado. Recipe below serves one happy person.

Super Easy Crab Avocado Nachos

  • tortilla chips (1-2 servings)
  • 1-2 slices pepper jack, broken into pieces (or 1-2 oz. shredded)
  • 1/2 avocado cubed (if you’re in a hurry) or mashed with a pinch of sea salt (and anything else you like, e.g. diced shallot, diced apple, garlic powder, etc)
  • double roasted garlic salsa (or your personal fave)
  • 1 can crab meat

The Magic:

1. Preheat oven to 350 degrees and prep a cookie sheet with a piece of foil or parchment (I used foil, but think parchment would be better – see below).

2. Spread a layer of tortilla chips on foil. I’ve learned not to overlap them too much. Piling them too densely doesn’t give you an accurate sense of how many servings you’ve got on there (way too easy to take so much). Also, it’s harder to get a good chip:cheese/toppings ratio if they’re stacked too thick.

3. Sprinkle pieces of cheese evenly over chips (I used 1 1/2 slices). Do the same with spoonfuls of salsa, crab (I only used about 2/3 of the can) and avocado.

4. Bake in oven until cheese is melted (~10 mins).

5. Remove from oven. Either scoop or invert nachos onto plate and eat. (This actually did not look pretty, which is why next time I’ll use parchment instead of foil and just slide the whole thing on to my plate or into a shallow bowl and eat it off the parchment paper. Baking in a small baking dish could be even prettier, but you’ll have to hold it with hot pads.)

    NUM! When we do nachos, we just take the whole darn baking sheet and place it on a wooden tray. I never thought to use a liner.

    I just had some pescatarian houseguests. If only I had seen this earlier, it would have blown their minds. I’ll save it for their next visit.
